A traditional Eritrean dish is Zigni with Injera. Zigni is a spiced meat (beef or lamb) stew which is usually served with Injera (a type of pancake). Here's the recipe:

- Large onion (finely chopped)
- Large tomatoes (remove skin)
- One small garlic clove (finely chopped)
- 2 tsp pepper
- 100-150ml of butter or oil
- 500g meat (preferred lamb, cleaned and cut into cubes)
- Heat the oil or butter in a large deep pan.
- Add onions, stir and cook until slightly brown.
- Add pepper and continue cooking for 10-15 minutes (moderate heat).
- Add tomatoes and continue stirring and cooking until the mix is reduced to a fine sauce.
- Add the meat to the sauce. Occasionally stir and cook until tender. Make sure that the meat has been properly and thoroughly cooked.
- Add garlic and salt and stir gently for a couple of minutes.
