Zigni

A traditional Eritrean dish is Zigni with Injera. Zigni is a spiced meat (beef or lamb) stew which is usually served with Injera (a type of pancake). Here's the recipe:

Ingredients

  • Large onion (finely chopped)
  • Large tomatoes (remove skin)
  • One small garlic clove (finely chopped)
  • 2 tsp pepper
  • 100-150ml of butter or oil
  • 500g meat (preferred lamb, cleaned and cut into cubes)
Directions
  1. Heat the oil or butter in a large deep pan.
  2. Add onions, stir and cook until slightly brown.
  3. Add pepper and continue cooking for 10-15 minutes (moderate heat).
  4. Add tomatoes and continue stirring and cooking until the mix is reduced to a fine sauce.
  5. Add the meat to the sauce. Occasionally stir and cook until tender. Make sure that the meat has been properly and thoroughly cooked.
  6. Add garlic and salt and stir gently for a couple of minutes.

Serving suggestionPut the Injera on a large plate. Take a portion of the Zigni and pour into the centre of the Injera. Use your hands to eat; lift the Zigni using small pieces of Injera. (Forks and knives are not allowed!)
